Ingredients
Batter
- ½ cup plain seltzer
- ½ cup rice flour
- ½ teaspoon oregano, chopped
- ½ tablespoon basil, chopped
- ¼ teaspoon cumin
- Pinch of cayenne
- 1 clove garlic, minced
- 1 teaspoon egg replacer
- Sea salt to taste
- Freshly ground black pepper to taste
Zucchini
- 2 medium zucchini, each sliced lengthwise into 4 pieces
- 1 cup of panko (Japanese bread crumbs), or similar
- 2 tablespoons olive oil
How to Make It

For the Batter
- Combine all ingredients in a bowl and mix well with a whisk until smooth.
- Preheat oven to 350°.
- Dip zucchini into batter then roll in breadcrumbs. Place on a nonstick baking sheet and drizzle with olive oil. Bake for 15 minutes, or until golden brown.
- Remove from oven and place on paper towel to absorb excess oil.
- Serve with a salad or Exotic Tofu Dip.
