Ingredients
- 1 box uncooked shells pasta
- 6 hardboiled eggs
- 1 chopped red bell pepper
- 2 minced green onions
- 2 large tuna cans in oil (well drained)
- 1 can well-drained, seasoned black beans
- Salt
- Black pepper
- Pinch of cayenne pepper
- ½ teaspoons dried basil
- 2-3 Tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 tablespoon Dijon mustard
How to Make It
- Cook the shells pasta as you normally would by boiling the water with salt and a little oil. Drain well and set aside when cooked.
- In a large mixing bowl, whisk together the mustard, oil, balsamic vinegar, and all of the spices.
- Add the chopped veggies (onions and peppers) and the cooked pasta. Mix well.
- Add the well-drained tuna.
- Finally, cut the hardboiled eggs in slices. Add the spices to the salad. Along with the drained black beans.
- Mix again and taste before serving. Adjust the seasonings if needed.
