Ingredients
- 2 Tbsp champagne vinegar or white wine vinegar
- 1 Tbsp lemon juice
- 4 tsp olive oil
- 1 tsp Dijon mustard
- ½ tsp salt
- ¼ tsp black pepper
- 4 tomatoes, cut into wedges
- 1 sweet onion, cut into thin wedges
- 1 cucumber, seeds removed, halved lengthwise, sliced
- ½ cup lightly packed fresh flat-leaf parsley leaves
- 2 ounces soft goat cheese, crumbled
How to Make It
- For the dressing, whisk together vinegar, lemon juice, oil, mustard, salt, and pepper in a small bowl until blended.
- Toss together tomatoes, cucumber, onion, and parsley in a large bowl. Drizzle dressing over and toss to coat. Divide salad evenly among 6 plates. Sprinkle evenly with goat cheese.
