Ingredients
- 2 Md Sweet potatoes, peeled and diced
- 1½ tsp Onion powder
- 1½ tsp Garlic Powder
- 1 Tbsp Fresh parsley leaves, fined chopped
- 1 lemon zest
- 1 Tab Lemon juice
- 1 tsp Celtic sea salt
- ½ tsp Freshly cracked pepper
- ¼ Cup Oat flour
How to Make It
- Preheat oven to 200C.
- Cook the sweet potatoes in a medium saucepan in boiling water. Once cooked (tender) drain the sweet potatoes and then place in a bowl.
- Add the onion powder, garlic powder, lemon zest and freshly chopped parsley to the bowl with the sweet potato. Mash the sweet potato either with a potato masher or a fork.
- Season with salt and pepper and mix through the oat flour. Add just enough flour (perhaps a little more or a little less then stated) until the mixture holds together nicely.
- Using wet hands, roll out the mixture in to small balls. Carefully place the balls to a lined baking tray.
- Place in the oven and bake for approximately 20 – 30 minutes until golden on the outside ensuring you turn them during the cooking process. Once evenly golden remove from oven. You can make these ahead of time and serve them either hot or cold with your favourite condiment if desired.
