Ingredients
- 4 beets
- ½ cup (120 ml) water
- 2 sprigs fresh thyme or 2 teaspoons dried
- 1 teaspoon crushed mint leaves (fresh or dried)
- Salt, to taste

The Night Before
- Peel and dice the beets. Make sure you’re not wearing your favorite clothes, because the beet juice will stain. Store in an airtight container in the fridge. In the Morning
- Combine all the ingredients in your small slow cooker. Cook on low for 7 to 9 hours. Remove and discard the thyme sprigs and taste and adjust the seasonings.
