Ingredients
- 4 large white onions
- 3 ounces fontina
- 2 ounces smoked scamorza
- Breadcrumbs
- Olive oil
- Salt and freshly ground pepper
How to Make It
- Peel the onions and boil in salted water for about 10 minutes.
- Drain the onions and set aside to cool. Remove the inner layers of the onions, leaving a shell. Chop the removed onion pulp, and set aside.
- Shred the fontina and scamorza, and combine in a bowl with the chopped onion, the breadcrumbs and 3 tablespoons of olive oil. Season with salt and pepper, and mix well.
- Stuff the onion shells with the cheese mixture, and arrange in a baking dish. Sprinkle the top with breadcrumbs, drizzle with olive oil, and place in a preheated 400° oven. Bake for about 15 minutes. Serve warm.
