Ingredients
- 2 egg whites, beaten
- ¼ tsp salt
- 2 cup spinach, chopped
- 1 tsp nutmeg
- ½ cup cottage cheese
- ¼ tsp pepper
- ¼ cup Parmesan cheese
How to Make It
- Set your oven to preheat at 425° F.
- Use oil to brush individual soufflé dishes.
- Cook the chopped spinach.
- Combine spinach with nutmeg and cottage cheese.
- Fold in the stiff egg whites. Spoon the mixture into the soufflé dishes.
- Top with parmesan and allow to bake for 20 minutes.
