Ingredients
- 1 cup couscous
- 1 pound peeled and deveined medium shrimp
- 1 shallot, chopped
- ½ teaspoon ground coriander
- ½ teaspoon ground paprika
- Kosher salt
- 1 tablespoon olive oil
- 1 (15.5-ounce) can white beans, rinsed
- ¼ cup white wine vinegar
- 2 tablespoons chopped fresh flat-leaf parsley
How to Make It
- Cook the couscous according to the package directions.
- Cook the shrimp, shallot, coriander, paprika, and ½ teaspoon salt in the oil in a large skillet over medium-high heat until the shrimp are opaque; transfer to a plate.
- Add the beans, vinegar, and ½ cup water to the skillet; cook until warm. Serve with the shrimp, couscous, and parsley.
