Ingredients
- 750 grams diced beef
- 2 tablespoons curry powder
- ½ cup plain flour
- 2 cups beef stock
- Oil
- 2 large potatoes, cubed
- 1 brown onion, sliced
- 1 green apple, peeled, grated
How to Make It
- Put flour into a bowl, add beef and toss well to coat. Heat a good splash of oil in a camp oven over high heat. Add half the beef and cook for 3-4 minutes or until browned. Remove and place in a dish to the side.Repeat with remaining beef.
- Add a good splash of oil and onion to camp oven. Cook for 3-4 minutes until tender. Add apple and curry powder then cook for 1-2 minutes until aromatic. Add stock and browned beef then stir to combine. Bring to the boil then add potatoes.
- Reduce heat to a low simmer for an hour or until beef is tender. Serve with rice.
