Ingredients
- 3 oz (85 g) cucumber, cut into batons
- 6 scallions, halved
- 2 tomatoes, seeded and cut into 8 wedges
- 1 yellow bell pepper, seeded and cut into strips
- 2 celery stalks, cut into strips
- 4 radishes, quartered
- 3 oz (85 g) arugula
- 1 tbsp chopped fresh mint, to garnish (optional)
For the Dressing
- 2 tbsp lemon juice
- 1 garlic clove, crushed
- ⅔ cup plain yogurt
- 2 tbsp olive oil
- salt and pepper
How to Make It
- To make the salad, gently mix the cucumber batons, scallions, tomato wedges, yellow bell pepper strips, celery strips, radishes, and arugula in a large serving bowl.
- To make the dressing, stir the lemon juice, garlic, plain yogurt, and olive oil together in a small bowl until thoroughly combined. Season with salt and pepper to taste.
- Spoon the dressing over the salad and toss to mix. Sprinkle the salad with chopped mint (if using) and serve.
