This is the classic way to prepare sweet potatoes, in my opinion. It’s so simple, and you can serve it with almost any protein plus a green vegetable, and you have a complete Paleo dinner without having to do much planning.
Ingredients
- 4 chopped sweet potatoes
- 1 quartered onion
- 2 minced garlic cloves
- 4 tbsp Extra-virgin olive oil
How to Make It
- Preheat the oven to 425°F.
- In a bowl, mix in the olive oil, sweet potatoes, onion, and garlic.
- Transfer to a baking sheet, and roast for 30 to 35 minutes, or until the sweet potatoes are fork-tender and slightly browned, and serve.
