Ingredients
- 3–4-lb roasting chicken or hen
- 1½ tsp salt
- ¼ tsp pepper
- 1 tsp parsley flakes, divided
- 1 Tbsp olive oil
- ½–1 cup water
How to Make It
- Thoroughly wash chicken and pat dry.
- Sprinkle cavity with salt, pepper, and ½ tsp. parsley flakes. Place in the slow cooker, breast side up.
- Rub or brush chicken with olive oil.
- Sprinkle with remaining parsley flakes. Add water around the chicken.
- Cover and cook on High 1 hour. Turn to Low and cook 8–10 hours.
