Ingredients
Dressing
- 1 tablespoon spicy mustard
- ¼ cup fresh lime juice
- 1 teaspoon rice vinegar
- 1 clove garlic, pressed
- Sea salt to taste
- ½ teaspoon freshly ground black pepper
Salad
- 1 cup quinoa, cooked
- 1 cup edamame, cooked
- ½ small red onion, sliced
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh mint, chopped
- 1 green bell pepper, chopped
- 1 cup bean sprouts, for garnish
- Sliced lime, for garnish
How to Make It
- Whisk mustard, lime juice, and vinegar together in a small bowl; blend until smooth. Add garlic, salt and pepper and mix well.
- Place quinoa, edamame, onion, parsley, mint and bell pepper in a salad bowl and toss with the dressing.
- Garnish with sprouts and lime slices.
