This is much lighter and airier than the New York-style cheesecake you may be used to.
Ingredients
- 2 eggs
- ¼ cup butter
- 1 cup sugar
- 1 tsp vanilla extract
- 1/8 tsp salt
- 1 cup ricotta cheese
- 2 cups milk
- 1 cup flour
- 3 tbsp confectioners’ sugar
- ¼ cup frozen raspberries
How to Make It
- Preheat the oven to 350.
- Whip the butter and sugar with a hand mixer.
- Add the eggs one at a time. Stir in the ricotta, vanilla and salt and combine well.
- Add the milk. Stir in the flour. Make sure you have a smooth batter.
- Pour the batter in a 9 x 13 baking dish. Bake for 40 minutes
- Let the cake cool, then dust with confectioners’ sugar and top with raspberries.
