This plum jam recipe is ideal if you do not have a food dehydrator but would still like to savor a sweet spread. It is delicious slathered on crackers and sandwich bread, added to muesli, or used in desserts.
Ingredients
- 4 tbsp white chia seeds
- 1⁄2 cup apple juice (optional)
- 1 lb 2 oz (500 g) plums
- 1 tsp ground cinnamon
- pinch of ground cardamom
- drop of vanilla extract
- 1 tbsp lemon juice
- 3 tbsp honey or agave syrup
How to Make It
- Soak the chia seeds in the apple juice, or use water, for 15 minutes. In the meantime, pit the plums.
- Place the plums, cinnamon, cardamom, vanilla extract, lemon juice, and honey or agave into a blender and process on the lowest setting. Make sure you can see little pieces of plum in the mixture and that it does not become too runny. Add the chia seeds, and process again briefly.
- Spoon the plum jam into jars with screw-top lids. Put the jars in the refrigerator, and let sit for at least 1 hour. The swollen chia seeds will further thicken the mixture. If you always use a clean spoon each time you take out a portion, the jam will keep in the refrigerator for 4–5 days.
