Ingredients
- Few leaves of lollo rosso
- Few leaves of radicchio
- Few leaves of mâche
- 2 ripe pears
- Black pepper
- Whole fresh chives, to garnish
For the Dressing
- 2 oz/55 g Roquefort cheese
- ⅔ cup plain yogurt
- 2 tbsp chopped fresh chives
- Black Pepper
How to Make It
- Place the cheese in a bowl and mash with a fork. Gradually blend the yogurt into the cheese to make a smooth dressing. Add the chives and season with pepper to taste.
- Tear the lollo rosso, radicchio, and mâche leaves into manageable pieces. Arrange the salad greens on a large serving platter or divide them among individual serving plates.
- Cut the pears into fourths and remove the cores. Cut the quarters into slices. Arrange the pear slices over the salad leaves.
- Drizzle the dressing over the pears and garnish with a few whole chives.
