This is so refreshing, and just a little bit wicked thanks to the mascarpone. And it’s especially good after a rich stew. You can replace the mascarpone and low-fat yoghurt combo with Greek yoghurt, if you prefer. Good served with cranberry, orange and pumpkin seed flapjacks.
Ingredients
- 2 oranges
- 2 tbsp orange marmalade
- 125 g mascarpone
- 125 g low-fat yoghurt
- 50 g pistachios, shelled and chopped
How to Make It
- Cut off the rind and pith from the oranges and segment them, keeping any juice that runs free. Combine the juice with the marmalade and add the segments, stirring to combine.
- Mix the mascarpone and yoghurt and divide between 4 glasses. Top with the orange mixture and pistachios, and serve.
