Ingredients
- 6 eggs (beaten)
- 2 green bell peppers (peeled and roasted)
- 2 red bell peppers (peeled and roasted)
- 2 tbsp oil
- 1 onion (chopped)
- 3 tomatoes (peeled and seeded)
- 1 lb feta cheese or sirene
- 2 cloves garlic
- 2 tbsp parsley (chopped)
- Pepper
- Salt
How to Make It
- Dice the bell peppers and cut the tomatoes.
- Pour the oil in a pan and heat over medium heat. Put the onions and garlic in the oil and sauté for 2 minutes, just enough for the onions to become soft.
- Add the bell peppers and mix. Then, cover and cook for 5 minutes.
- Now, put the tomatoes ad mix again. Cover and cook for another 5 minutes.
- Add the sirene and mix. Add the eggs and mix at intervals.
- Pour the parsley and cook for 1-2 minutes.
- Turn off the heat and serve immediately.
