Ingredients
- 4¾ cups white chocolate
- 1 cup unsalted butter
- ½ cup clear corn syrup
- 2 tsp vanilla extract
- ½ cup macadamia nuts
- Blue food coloring
- ½ cup macadamia nuts
- 5 cups mini marshmallows
- 1¼ cups mermaid-colored candies (+ extra for topping)
How to Make It
- Place the white chocolate, butter, and corn syrup in a pot over medium-low heat. Stir consistently until completely melted. Don’t worry if the chocolate and butter have separated. They will come together again as they cool.
- Remove the pot from the heat and stir the mixture with a spatula or a whisk until the chocolate and butter have fully combined. Add the vanilla extract and a drop of blue food coloring and allow to cool slightly.
- Add the macadamia nuts, mermaid-colored candies, and marshmallows and mix until just combined. Divide the mixture between two 9 x 9-inch square aluminum containers, and sprinkle some extra candies on top. Cover with aluminum foil and place in the freezer until set.
- Slice the fudge into bite-sized squares, and you’re done!
