Ingredients
- ⅓ cup scallions (finely chopped)
- 3 tbsp plain yogurt
- 3 tbsp plain yogurt
- ½ tsp salt
- ½ tsp black pepper
- 2 lb ground beef
- 6 x 1 oz slices of cheese (Monterey jack with jalapeno peppers
- 8 Kaiser rolls (cut open and lightly toasted)
- 8 lettuce leaves
- sliced tomato
Lime Mayonnaise
- 1/3 cup mayo
- ½ tsp lime zest
- 1 tsp lime juice
- 1 tsp Dijon mustard
How to Make It
- Prepare lime mayonnaise by mixing all the lime mayonnaise ingredients together. Cover and chill.
- Soak the hickory chips in water for an hour.
- Heat the grill up to medium and preheat the coals.
- Combine the yogurt, scallions, jalapenos and seasoning, stir the meat in. Share the mixture into 8 pieces and shape into 3/4” thick patties. Insert a dent in the middle of each.
- Using a covered grill, arrange preheated coals around a drip pan. Drain the wood chips and spread on the coals.
- Place burgers on the rack above the drip pan and grill keeping the lid closed. Cook for roughly 24 minutes only turning once or until the internal temperature of the meat is 165°F. On the last 2 minutes, place a piece of cheese on each patty.
