Imagine coming home at the end of a long day to a plateful of savory comfort food. Pair this easy make-ahead meatloaf with your favorite microwaveable vegetables for a simple dinner you don’t have to think about. If you like your meatloaf saucy, finish it with a coating of ketchup or barbecue sauce.
Ingredients
- 2 eggs, beaten
- ½ cup 2% milk
- ⅔ cup breadcrumbs
- ½ medium onion, chopped
- 1 teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- ½ teaspoon sage
- 1½ pounds lean ground beef
How to Make It
- Combine all ingredients in a large bowl, then form them into a loaf shape. Place the meatloaf in a labeled 1-gallon freezer bag, squeeze the remaining air out of the bag and seal it. Lay the bag flat to freeze.
- Allow the meatloaf to thaw overnight in the refrigerator. Place it in the slow cooker and top it with as much ketchup or barbecue sauce as you like. On serving day, place the meatloaf in the slow cooker, cover it, and cook on low for 8–10 hours.
