Ingredients
- Water, as needed
- 1 lemon juiced
- 2 large artichokes
- 1 tbsp olive oil
- Salt to taste
- Black pepper to taste
How to Make It
- Add 1" of water to a pot large enough to hold the artichokes and place over medium heat. Add the lemon juice and lemon halves. Cover and bring to a boil.
- Remove the outer ring of lower leaves. Cut off the tips of each artichoke leaf to remove the barb. Cut off the top inch of the artichoke and the last inch of the stem.
- Place the artichokes in the water with the stem up. Reduce the heat to low, cover, and steam for 15 minutes. Remove them from the pan. Discard the water and lemon. Place the chokes on a cutting board, top down. Slice the artichoke in half. Use a melon baller or spoon to remove the fuzzy choke.
- Place a grill pan over medium-high heat. Once it’s heated, brush the olive oil on the cut side of the artichokes and sprinkle lightly with salt and pepper. Place the chokes cut-side down on the grill pan and cook for 10 minutes. Turn them a quarter turn after cooking for 5 minutes. Serve with a garlic mayonnaise.
