Ingredients
Soft Noodles
- 1 cup buckwheat flour
- ⅓ cup warm water
- ¼ teaspoon sea salt
- 2 teaspoons olive oil
Sauce
- 2 tablespoons olive oil
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 2 fresh tomatoes, chopped
- ½ green bell pepper, chopped
- ½ red bell pepper, chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh sage, chopped
- Sea salt to taste
- ½ teaspoon freshly ground black pepper
How to Make It

To the Noodles
- Place the flour and salt in a large mixing bowl and make a well in the center.
- Add the oil and water, and mix slowly with a fork so that it blends evenly.
- Once the flour appears saturated, knead by hand until the dough feels pliable, about 10 – 15 minutes. Cover the dough with a towel and let rest for half an hour.
- Place the dough on a floured surface and roll out with a rolling pin to desired thickness.
- Slice into pieces one inch wide and three inches long.
- To cook, place the noodles in boiling water and remove when they rise to the surface, about 1 – 2 minutes. To the Sauce
- Heat the oil in a skillet and sauté the onion and garlic until the onion is translucent.
- Add the tomatoes, bell peppers, parsley, thyme, sage, salt, and pepper and simmer for 30 minutes
- Serve over the noodles.
