Ingredients
- Olive oil
- 1 large onion, sliced
- 6 garlic cloves
- 2 lb stewing meat, cut into bite-sized pieces
- 2 quarts beef stock
- 1 can tomato paste
- 3 large potatoes, peeled and diced
- 4 small zucchini, chopped
- 4 small yellow squash, chopped
- 8 Roma tomatoes, chopped
- 1 green pepper, diced
- 1 red pepper, diced
- 1 yellow pepper, diced
- 6 celery stocks, chopped
- 4 large carrots, peeled and diced
- ¼ cup flour plus ½ cup beef stock mixed together
- Salt and freshly cracked pepper to taste
How to Make It
- Heat Instant Pot on Sauté mode. Add just enough olive oil to lightly coat bottom of the pot.
- Add onion and garlic. Sauté for about 3 minutes.
- Add stewing meat and brown.
- Add beef stock along with all other ingredients.
- Secure pressure cooker lid and pressure cook on high for 20 minutes.
- Allow pressure to release naturally.
- Serve with your favorite artisanal bread.
