Ingredients
- 10 ounces chickpea flour
- Olive oil
- Salt and freshly ground pepper
How to Make It
- Prepare a smooth, thin batter with the chickpea flour and about 4 cups of cold water.
- Stir in ¼ cup of olive oil and 1 teaspoon of salt. Mix well and set aside to rest for about 30 minutes.
- Brush a non-stick, ovenproof skillet with olive oil. Pour in the batter, and bake in a preheated 375° oven until golden on top. Serve warm or at room temperature with a grinding of pepper.
