A fricassee is a classic way of braising the chicken. This easy one-pot meal is sheer comfort food.
Ingredients
- 3 tbsp butter
- 2 tbsp olive oil
- 6 chicken drumsticks
- Salt and pepper to taste
- 2 tbsp minced shallots
- 1 cup sliced mushrooms
- 2 tbsp white flour
- ¾ can chicken broth
- ¼ cup white wine
- Dash of thyme
- Dash of tarragon
- 1 bay leaf
- ¼ cup sour cream
How to Make It
- Season the chicken with salt and pepper.
- Heat the butter in a large pan and sauté the chicken for 8 minutes, until browned.
- Use a tong to transfer the chicken to a platter.
- Add the shallots to the pan and sauté for 5 minutes.
- Stir in the mushrooms and sauté for another 5 minutes.
- Drizzle in the flour and stir for 2 minutes.
- Pour in the broth and wine and stir well.
- Adjust the salt and pepper and season with thyme and tarragon.
- Transfer the chicken to the pan and add the bay leaf.
- Simmer the chicken for 30 minutes.
- Turn off the heat and whisk in the sour cream.
- Remove the bay leaf. 13. Serve over rice or noodles.
