This is a classic Spanish stew.
Ingredients
- 3 tbsp olive oil
- 4 chicken legs
- Salt and pepper to taste
- 2 chopped onions
- 1 chopped green bell peppers
- 1 chopped red bell peppers
- 4 minced garlic cloves
- ¾ cup white wine
- ½ cup chicken stock
- 4 oz diced Serrano ham
- 1 tsp sweet paprika
- 2 cups canned diced tomatoes
- 2 chopped dried chili pepper
- 1 bay leaf
How to Make It
- Heat 1 tbsp. olive oil in a large pot.
- Season the chicken with salt and pepper.
- Brown for 5 minutes on all sides.
- Place the chicken on a platter.
- Add the remaining olive oil.
- Stir in the onions and bell peppers and cook on very low for 25 minutes.
- Add some of the chicken stock, if necessary. Add the garlic and continue cooking for 5 minutes.
- Pour in the wine and chicken stock.
- Simmer for 20 minutes.
- Stir in the remaining ingredients and let simmer for 50 minutes.
- Remove the bay leaf.
