This is a one-pot stew that great for family dinner.
Ingredients
- 2 tbsp olive oil
- 1 lb chicken thighs
- Salt and pepper to taste
- 1½ tsp paprika
- 2 cups chicken broth
- 1 chopped onion
- 2 cups canned diced tomatoes
- ¼ cup dry red wine
- 1 cup chickpeas soaked in water overnight
- 2 minced garlic cloves
- 2 cups baby spinach
How to Make It
- Heat the olive oil in a skillet.
- Season the chicken with pepper, salt, and paprika.
- Brown the chicken for 4 minutes each side, then place on a platter.
- Sauté the onion in the same skillet for 5 minutes.
- Stir in the diced tomatoes, broth, and red wine
- Add the chickpeas and return the chicken to the skillet.
- Simmer for 45 minutes. Stir continuously. Just before the dish is done, add the spinach.
