Ingredients
- 2 tablespoons olive oil
- 1 large yellow onion, diced
- 2 garlic cloves, minced
- ½ red bell pepper, chopped
- ½ orange bell pepper, chopped
- 1 fresh tomato, chopped
- ½ cup water
- 2 tablespoons fresh basil, chopped
- 2 tablespoons fresh parsley, chopped
- ¼ cup olives, pitted and sliced
- 1 tablespoon grated lemon zest
- Sea salt to taste
- ½ teaspoon freshly ground black pepper
- 2 cups Brussels sprouts, steamed
- ½ head red leaf lettuce
How to Make It
- Heat the oil in a medium saucepan over medium heat and sauté the onion, garlic, and bell peppers until the onion is translucent.
- Add the tomato, water, basil, parsley, olives, lemon zest, salt, and pepper and let simmer for 15 minutes, stirring occasionally.
- Add the Brussels sprouts and simmer for a few minutes until warm. Serve on a bed of red leaf lettuce.
