Some inventions happen just because we’re having fun. When Sebastien discovered that my partner, Laura Cunningham, liked oatmeal cookies but had been picking out the raisins (she doesn’t like dried fruit), he decided to make a cookie in her honor, replacing the fruit with nuts. Thus The Laura Cunningham, aka TLC, was born.

Composed almost entirely of wholesome nuts, seeds, and oats, this loaf is something of a miracle bread. The secret to its structure is powdered psyllium husk, a plant fiber with strong binding properties when hydrated. We toasted our nuts and seeds to enhance their flavor, mixed in oats, flaxseeds, and psyllium, plus canola oil and maple syrup for a hint of sweetness, and let everything hydrate for two hours in a loaf pan. Whether you’re having this for breakfast or brunch it’s definitely a plan-ahead dish as the beans need to be soaked overnight and their cooking time can vary, depending on how old they are. If the beans are fresh they will take about 40 minutes, but if they are older they can literally take hours. It’s also worth noting that the dish develops more flavour if it’s made in advance, so do allow time for this.

A paillard is the perfect way to cook chicken breasts. You have to do a little work on the front end pounding but then cooking them only takes about two minutes each.
