Ingredients
- 4 to 6 cups romaine lettuce or spinach
- 1 to 2 cups classic coleslaw mix
- 2 cups cubed or shredded cooked chicken
- 1 (11-ounce) can mandarin oranges, drained
- ¼ cup finely chopped green onions (optional)
- ½ cup sliced almonds or cashews
- ¾ cup wonton strips or chow mein noodles
- ⅓ cup mayonnaise
- 2 tablespoons rice wine vinegar
- ¼ cup honey
- 1 teaspoon Dijon mustard
- ⅛ teaspoon black pepper
- Salt
How to Make It
- Toss the lettuce and the coleslaw mix in a large bowl or four to six individual bowls. Place the shredded chicken, oranges, green onions, almonds, and wonton strips on top.
- In a small bowl, whisk together the mayonnaise and vinegar. Whisk in the honey, mustard, and pepper. Taste for seasoning and add salt, if desired. Drizzle the dressing over the salad, using 1 to 2 tablespoons per serving.
- Serve immediately.
