Ingredients
- 2 ½ tablespoons coconut oil, divided
- ¼ cup oat flour
- ½ cup cooked split peas
- ⅓ cup curry powder
- ¼ teaspoon minced garlic
- ¼ teaspoon sea salt
- ¼ teaspoon oregano
- ¼ cup filtered water
- ½ cup coarsely chopped kale
- ½ cup bite-size broccoli pieces
- 1 cup cooked brown short, grain rice
- ½ avocado, sliced
How to Make It
- Preheat oven to 375°F.
- Lightly grease 4-by-8 baking pan with coconut oil.
- In a blender, combine oat flour, split peas, oil, curry, garlic, sea salt, oregano & water.
- In a separate bowl, combine kale, broccoli, & brown rice. Mix well.
- Transfer to covered baking pan, top with flour & peas mixture. Bake for 15 minutes.
- Place avocado slices on top for garnish. Serve hot.
