Spain is the world’s second -largest almond producer, so they use a lot of those delicious nuts. In Galicia, it is baked in the shape of a cross as an offering to St. James in every bakery.
Ingredients
- 1¾ cups almond flour
- 6 eggs
- 1½ cups sugar
- 1 tsp orange zest
- 1 tsp lemon zest
- ¼ tsp almond extract
- ¼ tsp cinnamon
- Dash of vanilla extract
- 2 tbsp Amaretto
- ¼ cup apricot jam
- Confectioners' sugar for dusting
How to Make It
- Preheat the oven to 350 degrees.
- Whip together the almond flour, eggs and sugar with a hand mixer.
- Stir in the remaining ingredients except the apricot jam and dusting sugar.
- Lightly butter an 11-inch baking pan.
- Place the batter in the pan.
- Bake for 40 minutes. Let cool.
- Spread the apricot jam over the top of the cake, then dust with confectioners’ sugar.
