Dressed up or dressed down, meatloaf can be served for a dinner party or an everyday family meal. This same recipe can be used to make meatballs to serve with your favorite pasta.
Ingredients
- ¾ cup (70 g) Bread Crumbs
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 1½ tablespoons flaxseed meal
- 1 teaspoon chopped fresh basil
- 1 teaspoon chopped fresh cilantro
- 1½ pounds (680 g) ground beef
- 1½ tablespoons light olive oil
- ½ cup plus 2 tablespoons (150 ml) Hemp Milk or non-dairy milk of choice
- 1 small onion, peeled and minced
- 1 clove garlic, finely grated
How to Make It
- Preheat the oven to 350°F (180°C). Grease a 9 by 5-inch (23 by 13 cm) loaf pan.
- Combine the bread crumbs, salt, pepper, flaxseed meal, basil, and cilantro in a large mixing bowl. Add the meat, oil, milk, onion, and garlic. Use your hands to massage the ingredients together until they are evenly distributed and the mixture is smooth.
- Scoop the meatloaf into the prepared loaf pan. Pat it down evenly and smoothly to the edges of the pan.
- Cover with aluminum foil and bake for 45 minutes. Remove the foil and bake for 15 to 25 minutes longer, until the meatloaf is nicely browned and pulling away from the edges of the pan. Let it sit for 10 minutes before slicing.
