These bars have a mixture of so many wonderful flavors. I make them often during the holiday season
Ingredients
For Bars
- 1 cup (225 g) packed brown sugar
- 2 bananas, sliced
- 0.33 cup (80 ml) vegetable oil
- ¼ cup (60 g) unsweetened applesauce
- 6 tablespoons (90 ml) orange juice
- 1 cup (125 g) Bob’s Red Mill white or brown rice flour
- ½ cup (60 g) Bob’s Red Mill tapioca flour
- 1 teaspoon (4.6 g) baking powder
- Dash of salt
- ½ cup (50 g) dried cranberries
- 1 teaspoon (1.7 g) lemon or orange zest (optional)
For Glaze
- ½ cup (60 g) powdered sugar
- 1 tablespoon (15 ml) orange juice
- 1 teaspoon (1.7 g) lemon or orange zest (optional)
How to Make It
- Preheat oven to 350°F (180°C, or gas mark 4). To Make the Bars
- With a mixer, cream together brown sugar, bananas, oil, applesauce, and juice. Mixture will be a little lumpy. Add in the fl ours, baking powder, and salt and mix until smooth. Stir in the cranberries and zest, if using. Pour into a 9 x 13-inch (23 x 33-cm) baking pan.
- Bake for about 40 minutes, or until firm in the center. Let cool To Make the Glaze
- Whisk together powdered sugar, juice, and zest, if using. With a spoon, drizzle the glaze over the cooled cake. Cut into bars.
