Ingredients
- 3 bell peppers: 1 orange, 1 red, and 1 yellow
- 2 cups cooked brown rice
- 2 cans white tuna (well drained, either in oil or water)
- 1 minced green onion
- 1 tablespoon minced garlic
- 1 tablespoon olive oil
- 1 ½ cup shredded mozzarella cheese
- 1 cup mild salsa
- Salt
- Black pepper
- Pinch cayenne pepper
How to Make It
- Preheat the oven to 350 °F.
- In a skillet, heat the olive oil. Cook the onion and the garlic for 5 minutes. Set aside.
- Spray a baking dish with cool oil and set aside.
- Wash and prepare the bell peppers by cutting them in half. Remove all seeds.
- In a medium mixing bowl, mix the rice, tuna, and salsa. Then, add the cooked onion and garlic.
- Fill each half pepper and top it off with the shredded Mozzarella cheese.
- Place in the oven for 35-40 minutes.
- Serve as the main dish with a side of potato chips.
