These chocolaty, no-cook truffles are special treats, and they’re quite rich, so have only one at a time. If you’re not a fan of walnuts, replace them with pecans. If the mixture is too sticky to handle, refrigerate it for half an hour to let it firm up before rolling it into balls.
Ingredients
- 2 cups (160 g) instant oats
- 0.66 cup (164 g) smooth peanut butter
- ½ cup (160 g) maple syrup
- 1 teaspoon vanilla extract
- ½ cup (60 g) dried cranberries
- ½ cup (60 g) chopped walnuts
- ½ cup (87 g) chopped dark chocolate
- 1 tablespoon (about 5 g) sifted cocoa powder
- 1 tablespoon (7 g) sifted confectioners’ sugar
- ½ cup (42 g) shredded coconut
How to Make It
- Combine all the ingredients in a large bowl. Roll the mixture into 10 small balls. Store in the fridge for up to 3 to 4 days.
