Bob Chorba is the traditional Bulgarian bean soup. Regarded as a national dish in many quarters, it is quite something to feed the mouth. It is packed with all the taste that you are looking for in a soup, and just enough to warm you up.
Ingredients
- 4 tbsp oil
- 1¼ cup dried white beans
- 1 green bell pepper (chopped)
- 1 onion (chopped)
- 1 carrot (chopped)
- 2 tomatoes (chopped)
- 1 bunch fresh parsley (chopped)
- 2 tsp dried spearmint
- 1½ tsp paprika
- Black pepper
- Salt
How to Make It
- Wash the beans thoroughly. Pour in a pot, add water and leave it to soak for the night.
- Pour away the water the next morning. Replace the water with 3 fresh cups of water and boil over medium heat for 5 minutes.
- Get rid of the water again. Add 2 tablespoons oil and fry for 2 minutes. Stir at intervals.
- Now, add four cups of water into the pot. Reduce the heat and cook for 40-45 minutes to become softer.
- During that time, grab another pan, Pour in 2 tablespoons of oil, the carrots and oil and sauté for 8 minutes.
- Include the tomatoes, paprika, bell pepper, pepper, salt, and mix. Let it cook for 5 minutes.
- Mix them with the content in the other pot. Continue cooking until the beans are soft. Ensure that you don’t overcook them. Serve hot.
