Ingredients
- 1 cup all-purpose flour
- 1⁄2 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 stick unsalted butter, softened at room temperature
- 1⁄4 cup cream cheese, softened at room temperature
- 1⁄2 cup light brown or palm sugar
- 1½ teaspoons vanilla extract
- 2 eggs, room temperature
- 1⁄4 cup finely chopped or ground toasted nuts (hazelnuts, walnuts, almonds)
- 2 overripe bananas, mashed with a fork
- 1⁄2 cup semisweet chocolate chips
How to Make It
- Preheat the oven to 350°F.
- In a medium bowl, sift together the flour, baking powder, baking soda, and salt and set aside.
- In a medium bowl, sift together the flour, baking powder, baking soda, and salt and set aside.
- To the bowl of a stand mixer with a paddle attachment (you can also use a hand mixer), add the softened butter, cream cheese, sugar, and vanilla. Cream together on a medium speed until light and fluffy.
- With the mixture on low, add the eggs one at a time, making sure they are incorporated. Add the flour mixture in 3 increments, stopping and scraping down the sides of the bowl between each addition. Carefully, fold in the nuts, mashed bananas, and chocolate chips, again in increments, until the mixture is uniform.
- Line a muffin tin with paper liners. Use an ice cream scoop to scoop equal amounts of batter into each. Bake on the middle rack of the oven for 20 minutes, until an inserted toothpick comes out clean.
